We finally arrived in North Georgia. Lindsay and Hunter couldn't wait to take pictures despite the overcast and cooler temperatures. They loved stopping around in the damp ground covered in leaves of all shapes and colors.

Vicksburg National Military Park

We began our trip with a stop to the Vicksburg National Military Park. It was a cool crisp fall day. We spent the entire morning exploring the park. Steve really enjoyed exploring the U.S.S. Cairo.

Trunk or Treat

Just goes to show a little creativity goes a long way. Lindsay suggested we decorate our car with angry birds for our church's annual Trunk or Treat, so we ran with the idea.We found awesome t-shirts for Steve, Linday and myself and couldn't help but splurge. I blew up the birds and made them out of colored paper. Lindsay collected paper boxes and decorated them to look like wood and she drew faces on the green balloons to recreate the pigs. The kids loved our trunk-so much so that we were voted the most creative car and won a gift certificate to a local car wash. I was a great event with nearly 1,000 kids participating.

Special Olympics

It has been a busy October with Special Olympics in full swing. My Special Olympic athletes have already had the bocce meet and the Area golf skills contest. Next month we have the Area bowling competition. I have two new athletes and we keep adding new sports for our athletes to participate in.. We already compete in bocce,golf, bowling, basketball, gymnastics and track and field. This year we are adding table tennis and possibly softball. I would love to add swimming but my team does not have access to a pool and I don't have enough staff for one-on-one help with the athletes in the water. I love coaching Special Olympics!!!

My students helped me decorate my classroom door this week. Can you tell who we are rooting for in the World Series? Lets Go Rangers!! This was a great weekend for Texas sports fans... Texas Tech beat Oklahoma, The Dallas Cowboys beat the Rams, the Houston Texans beat the Titans and the Texas Ranger's took a game in the World Series on Sunday night.

Raining in West Texas

I know to the rest of the family this is a common occurrence, but we have not had significant rain in Lubbock since August 2010. This is music to our ears and the answer to many a prayer. I know my kids will always remember how dry and hot this summer has been. We have been in the 100 degree temperatures for the majority of the summer.

Back to School Again!

Backpacks are ready and waiting for the start of school. I return to work Wednesday August 10th. Sad day! We had a wonderful relaxing summer. We survived Summer baseball games, drivers ed., strength and conditioning at the high school, a vacation to Georgia, Texas Rangers game in Arlington. We took a trip to East Texas at the lake with Dana and her family. Hosted a bridal shower and attended the 50th anniversary celebration at our church. Our biggest challenge this summer was enduring the West Texas heat wave. It has been 100 degrees or above nearly all summer. No green grass, cotton crops or fresh tomatoes. I am very grateful for air conditioning even though it cost us a fortune to run it this summer.

Although we hated to say goodbye to the Morgan's we look forward to being reunited with our family in Georgia in November. Our hearts were heavy with the news of GG's passing, but we look forward to celebrating her life with family and friends.

As the kids get older our time together seems to be fleeting. With our busy work, school and sports schedules we don't get to spend quality family time together. This weekend I was able to step back and enjoy a brief moment with all four of us in harmony. What a precious gift.

This was our first trip to Brent and Angie's lake house. I was excited when the Morgan family invited us to stay at their lake house in Mount Vernon, Texas. I had only seen pictures of it on Angie's blog. It was everything I envisioned and more.It was the perfect location for our family reunion with Darin, Dana, Mackenzie and Mason.

Rangers Game

We began our trip by attending a Texas Rangers game. The seats at the game were phenomenal we sat behind the third base line in the second row. Wow! Hunter took advantage of some open seats and moved to the front row.The Rangers scored 13 runs and were were able to see them up close and personal. What a great treat. Thanks Steve for an unforgettable evening at the ballpark.

Unfortunately my camera was acting up and I didn't get a many clear shots as I was hoping for, but the deer were everywhere. Nana and Grandpa said they had never seen so many at one time. Every street we turned down we would see a cluster of deer. I thoroughly enjoyed taking my camera and catching these beautiful creatures.

Lake Arrowhead

The lake was calm and smooth as glass. Dad and I had a great time catching pan fish and bass. I see why my parents love this place. The tree frogs were out in full force and the lightning bugs were everywhere. We lost electricity on Saturday night and we enjoyed the evening by candlelight listening to the great outdoors on the patio. This was a wonderful relaxing trip.

Well it took a few nights but I finally snagged a large mouth bass. It was 18 inches and 3 1/2 pounds. I actually caught it off the dock. It was exciting the fished jumped out of the water right in front of us trying to dislodge the hook. I'm glad we had the net or we might not have gotten him out of the lake. Thanks dad for an exciting fishing adventure (and for taking the fish off the hook).

This was my first handmade prom wrist corsage. It is hard to see but it had really cute pink beaded butterflies and a pretty stretch wrist band. Her dress was coral and silver so it matched her dress perfectly. I thought it turned out great,I hope Hunter's date enjoyed it. (amazing how Utube can inspire creativity)

Your never too old to dye eggs...

Hunter is such a trooper- he helped me dye this years Easter eggs. This time in place of the standard egg dye I had cups of Koolaid on the table. We had a blast experimenting with the different flavors. The black cherry was my favorite and Hunter liked the lemon-lime. When we finished dyeing the eggs we rubbed them with a little cooking oil to shine them up. Hunter was amazed at how incredible they looked when we were finished polishing them. Of course he immediately posted them on his facebook page. Another great Easter memory in the books..

The lemon-lime jello, black cherry and orange made the most unusual color combinations. The Koolaid dyed eggs were a hit this year. The whole kitchen had the aroma of blended koolaid scents. Now I'll have to be on the look out for other colors. If anyone sees a packet of blue koolaid grab it and send it my way.

This weekend was my Special Olympic athletes Gymnastic Area competition. My athletes did a great job and each brought home a medal. Lindsay went and helped out with my team. She had a good time being the official photographer and helped me keep the kids all rounded up.

I had a wonderful Birthday celebration with my beautiful daughter. We went to the Funky Door and shared a cheese platter, fondue, wine and a yummy banana dessert fondue. Lindsay gets credit for bringing home the recipe and making these yummy treats, but Hunter has made them twice. Can you believe they are made from oreo cookies? Yum! The hardest part of making these delicious treats is waiting for the white chocolate to harden. Happy Valentines Day-wishing you were here to taste Hunter's oreo truffles.

My friend from Houston asked me to swing by Texas Tech and take a few pictures of her son Taylor in the snow, since Taylor had never been around any significant snow before this week. We finally got our first significant snow fall for the season. The best news was that school was cancelled for the day!! We got around 2 inches of snow and the temperature never got above 14 degrees. The wind chill is predicted to be -15 degrees and we are getting more snow tonight. School tomorrow is going to be delayed until 10 am so we will have to bundle up before we head out the door. This sure isn't baseball weather.

We are so excited for Hunter and can't wait for the season to begin. Today the team held a inter-squad scrimmage with mixed Varsity and JV players. Hunter hit a beautiful line drive to the outfield. He also played some first base and pitched an inning. We look foward to playing with the JV coach-he is very enthusiatic and really encourages the boys.

Hunter made the Lubbock High School JV baseball team. Yea Hunter Boo!! The head coach called Hunter in and told him he was on the JV team but said that if he had not been a transfer student he would have made the Varsity (the school district has a strick no Varsity play the first year of transfer). Hunter was beaming knowing he has the skills to be a Varsity player on a 5A team. What a great opportunity for Hunter to step up to the plate and be a team leader.

Saturday at the little league baseball park Lubbock High hosted its annual softball tournament fundraiser benefiting the baseball program. The event showcased teams of Lubbock High students, parent teams, alumni teams and a team of coaches. Steve and I worked the concession stand early in the morning till around noon. We were able to slide out to watch Hunter's team play. Unfortunately they lost their two games, but I think Hunter had a good time hanging out with his new found friends. Grandpa double click on the photo and notice Hunter was wearing his new gloves from Christmas-he said they really kept his hands warm and he looked cool.

Homemade Peppermint Marshmallows

Homemade Marshmallows

Ingredients:

• 3 packages unflavored gelatin

• 1 cup ice cold water, divided

• 12 ounces granulated sugar, approximately 1 1/2 cups

• 1 cup light corn syrup

• 1/4 teaspoon salt

• 1 teaspoon peppermint extract (can subsitute vanilla or other flavored extract-I reccomend peppermint)

• confectioners' sugar

• Butter (for coating pan)

Directions

Place the gelatin into the bowl of a stand mixer along with 1/2 cup of the water. Have the whisk attachment standing by. Generously grease bottom and sides of 11x7-inch (2-quart) glass baking dish with butter; dust with 1 tablespoon of the powdered sugar

In a small saucepan combine the remaining 1/2 cup water, granulated sugar, corn syrup and salt. Place over medium high heat, cover and allow to cook for 3 to 4 minutes. Uncover, clip a candy thermometer onto the side of the pan and continue to cook until the mixture reaches 240 degrees F, approximately 7 to 8 minutes. Once the mixture reaches this temperature, immediately remove from the heat.

Turn the mixer on low speed and, while running, slowly pour the sugar syrup down the side of the bowl into the gelatin mixture. Once you have added all of the syrup, increase the speed to high. Continue to whip until the mixture becomes very thick and is lukewarm, approximately 12 to 15 minutes. Add the vanilla during the last minute of whipping.

Pour into baking dish, patting lightly with wet hands. Drop red food color randomly onto top of marshmallow mixture. Pull table knife through food color to create swirl pattern over top. Let stand uncovered at least 8 hours or overnight

Dust cutting board with about 1 tablespoon powdered sugar. Place remaining powdered sugar in small bowl. To remove marshmallow mixture, loosen sides from dish and gently lift in one piece onto cutting board. Using sharp knife greased with butter, cut into 1-inch squares (11 rows by 7 rows). Dust bottom and sides of each marshmallow by dipping into bowl of powdered sugar. Store in airtight container at room temperature up to 3 weeks.

The peppermint is my favorite it taste great in a cup of hot chocolate and yummy to eat all by itself. We have already made 3 batches since winter arrived. These beat store bought marshmallows hands down...My kids ask me to make the peppermint again.

Okay its official I can no longer afford my teenage son playing baseball. Before Christmas he broke a wooden bat during batting practice. After extensive research Steve bought Hunter a bamboo bat. He broke the the bamboo bat the first time he took it to batting practice (okay that one was under warranty). So he went to batting practice tonight with his composite game bat which he proceeded to break it too. Thank goodness for good warranties. His teammates have nicknamed him The Beast!

Cupcakes

I found a recipe online for champagne cupcakes and Lindsay decided she wanted to make them herself. I thought she did an amazing job piping the frosting. They are so pretty they look like pink roses. The pink frosted sugar crystals just pop. We can't wait to gobble them up. Yum!

As I sit here reflecting on this past year 2010, I can't help but think about all the wonderful memories I'll treasure and store in my heart.
And like each year, 2010 had its positives and negatives...

Negatives:
*Lindsay's set back in her graduate program at Texas Tech University-although this seemed devastating at the moment we know it will be a blessing in disguise.
*Hunter's injury at baseball practice-we are just grateful there was no long term damage.
*Spending time my G.G. who has Alzheimer's disease. I was blessed to have a wonderful visit with her but it was difficult seeing her mental state.
*not getting to see my sister Dana and her family this year-thank goodness for facebook and blogs.

Positives:
*Our 25th Anniversary celebration in St. Lucia-My husband surprised me with and incredible trip.
*Lindsay graduating from Lubbock Christian University,and the time spent with mom and dad who made the trip to Lubbock to help us celebrate.
*Hunter attending Lubbock High School in the magnet program. He loves his new school and the baseball program.
*Texas Ranger's making it to the World Series-we followed the team the whole season even while in Colorado.
*Hunter hitting home runs all spring and summer (I lost count but I remember the walk off home run and the monster home run at the westerner field)
*The trip to Colorado Springs with my guys-who could forget the fishing trip in the mountains.
*The wonderful and supportive new friends that we made while playing baseball in the spring.
*My trip to Georgia to visit my parents and my brother's family. I love North Georgia in the summer it is such a relaxing place to unwind

The Wedding

Lindsay's best friend Leanna got married on Sunday afternoon. Lindsay helped her sisters prepare for the wedding for days in advance. She wasn't a bridesmaid because Leanna's two sisters were her only bridesmaids and it was a very small wedding.

Steve's brother Kevin brought the newest member of the Parrish family baby Christian to the Graduation. Hunter is wearing a white gown because he was Lindsay's escort. His main job was to walk her to her seat and place the hood over her during the ceremony. He did not know he had to wear the white gown when he agreed to be her escort.

The Alumni of L.C.U hosted a reception for the graduates on Friday night. It was a very nice reception with finger food,dessert and puch. Lindsay's advisor and Department Chairman came over and had nice long conversations with her and even one of her professor's came by and chatted with her. The presidents wife of the University came over and introduced herself. They gave Lindsay a gift before she left-a beautiful L.C.U. alumni mug filled with candy.It was a wonderful way to kick off the graduation weekend. Lindsay was excited that Nana was there to attend the reception.

Happy 25th Anniversary

On December 6th 1985 Steve and Deborah Parrish became husband and wife. This year we are celebrating our 25th wedding anniversary. Steve has a surprise trip planned over the Christmas holiday and won't reveal where we are going until we get on the airplane. All I know is that we had to get passports and that I need to pack a bathing suit. I wonder.....

Special Olympic Bowling

Lindsay and I had a wonderful fun filled Saturday togather. I coached my Special Olympic team while Lindsay cheered on the middle school kids and volunteered in the lane with one of my high school athletes.She was excited to see the Lubbock Christian University girls basketball team who were there volunteering at the first shift of the competition. She was able to visit with the girls and I got a chance to thank the head coach for his girls particiaption in the Area Special Olympic bowling competiton. What a great day, my high school team took home gold and silver.

West Texas Cotton

You know it is fall in Lubbock when the West Texas farmers begin to strip their cotton. The Parrish family would like say Happy Fall Ya'll! The weather here is slowly changing and our nights are getting cooler. Of course as the old saying goes if you don't like the weather in Lubbock wait a day or two and it'll change. Right now it is 80 degrees but last week we got down into to the 60"s.

Today's events caught us completley off guard. We went to the ophthalmologist to check out Hunter's eye only to discover swelling and blood in the eye. We were sent to the retina specialist who said if the swelling continues we are looking at the possibility of a torn or possibly detached retina. Having to watch Hunter like a hawk. We let him go to his homecoming game for a quarter just to get some fresh air. I'm still a little shaken by today's news.

Steve and I were packing to leave for Oklahoma City when we got the call from Hunter's baseball coach at the high school that he had been hit by a ball- and we needed to take him to the emergency room. We spent 4 1/2 hours at the ER to get a CAT scan that praise God showed no broken bone around the eye. He was lucky only 4 stitches and a grade 2 concussion.

Weekend at Lake Brownwood

Steve's entire family celebrated Pat and Doyle's 50th wedding anniversary at Lake Brownwood. Unfortunately the town had not had rain in over 45 days and the lake had receded past the dock-So much for the prospect of fishing near the cabin. The guys did go out late in the evening and fish after dark. Amazingly, Hunter caught an 18 inch bass and the guys fished until 2 in the morning. Lindsay and I joined the family on Saturday because Lindsay had to work a high school football game on Friday night.We took a lot of photos of the kids and family (28 in all) and managed to take a large family photo (which was no small feat). On Sunday we cleared out the bunkhouse and had one last meal at a restaurant in Brownwood. It was a great way to wrap up the weekend with the family.

Hunter is loving his classes at Lubbock High and is really enjoying his computer animation class at the Technology Center. The Parrish family is proud to introduce the newest member of its canine family Chiquita. She is a lovable, intelligent two year old Welsh Corgi. She loves to run around the backyard and will play with who ever is out there with her. She is already Lindsay's special dog who slept in her room without a peep last night and crawls into Lindsay lap any chance she gets.She has only barked a couple of times.Titan has accepted her already and he now stays outdoors for longer periods of time with her. He has shared his food and his big bone and hasn't even barked or growled at her. It's really cute because she and Titan are the same color.

Lubbock-High School

We went to pick Hunters schedule up today but it wasn't printed yet. He begins school this year on a new campus. Actually the oldest school in Lubbock County -Lubbock High School. His mascot is the Westerner (a man riding a horse) and his new school colors are gold and black. His campus is three stories high (hope he can find his way around on the first day of school).

Lindsay & Hunter have a favorite treat this summer frozen yogurt with unlimited topping choices. The new spot is called Spoonful and they can't seem to get enough. There are a variety of frozen yogurt flavors and tons of toppings to choose from. It's a trendy little place located next to Texas Tech University. Next time we have visitors to Lubbock we will have to take you there. Bon Appetite.

Colorado Springs our Final Destination

Steve had a company meeting in Colorado Springs and we stayed in the Cheyenne Mountain Resort. The weather was perfect in the 80's during our stay. The resort had three pools (1 indoor and 2 outdoor) which Hunter graced with his presence.We did a liitle sightseeing at the Air Force Academy and the Olympic Training Center. It was a great way to cap off the summer. Now we are ready for school.

Hunter couldn't wait to jump into the natural hot springs in New Mexico. Boy was he surprised it was HOT!! There were three pools each with varying degrees of hot natural spring water. Hunter wouldn't even try the deep pool which was blistering hot. When he got out of his pool his chest was beet red. Steve thought he was crazy.

We began our vacation in Las Vegas New Mexico with a little fishing. I never thought we would have such a wonderful time there. The guys fished at the lake while I went shopping on the square (actually I read my book in the park). We went to an amazing creek nestled between several mountains. We even tacked on an extra day there to fish in the Pecos mountains. It was 57 degrees-amazing! The guys had a great time catching and releasing trout. I lost count on how many fish they caught.
